Blueberry French Toast Muffins

Ingredients:

  • 6 slices whole wheat bread cubed up

  • 4 Eggs

  • Splash of Vanilla

  • ½ cup milk of choice

  • 2 bananas mashed

  • 1 cup blueberries flattened

Directions:

  1. Preheat oven to 350 degrees. Line a muffin tin with cups or use a silicone muffin liner for easy to pop out.

  2. Mash the bananas.

  3. Mix together eggs, vanilla, milk, and flattened blueberries with mashed bananas.

  4. Pour in cubed up bread and mix until all the bread is coated

  5. Place into muffin dish. Bake for 30 minutes at 350 degrees.
