Broccoli Fritters

Ingredients:

  • 1 Small Potato (peeled and sliced)

  • Handful of frozen Broccoli Florets

  • Handful of frozen peas

  • 1 Egg

  • 2 Tablespoons of flour

  • Spices (garlic powder, salt, and pepper)

  • Mozzarella Cheese

Directions:

1.       Steam potato, broccoli, and peas until soft.

2.       Blend steamed veggies to desired consistency.

3.       Mix blended veggies with egg, flour, cheese, and spices.

4.       Heat skillet with small amount of vegetable oil.

5.       Form pancake like fritters and cook 3-4 minutes on both sides.

6.       Refrigerator for 3 days and freeze up to a month.
